Summer Squash Recipe
The days are getting warmer and longer, which calls for some new summer recipes. Here is a recipe which I tried the other day, which is really fresh and sweet. Below are the steps in order to make your own summer squash.
1 pound squash
1/4 cup olive oil
1/2 cup grated parmesan cheese
1/3 cup bread crumbs
1/4 cup ground pepper
1. Pre-heat oven to 350 degrees. Slice the squash into rounds and toss with olive oil in a bowl.
2. Throw in bread crumbs, cheese, and pepper into their own bowl and mix well. Put squash into a baking dish and sprinkle bread crumb topping all over.
3. Cover baking dish with aluminum foil and bake for 30 minutes in the oven. After 30 minutes, remove the foil and bake for another 5 until the top is crispy.
4. Your summer squash is now complete! I put 1/4 cup pepper in my recipe instead of tsp, and it turned out to be a little spicy. If you're looking for less try 1/4 tsp pepper or skip it all together. Next time, I'll be skipping it :)
